Some shrimp scampi recipes tend to use chicken broth when that luscious sauce should only be made from 4 things:

  1. butter
  2. olive oil
  3. lemon juice
  4. white wine

Adding broth to the scampi is a no-go unless you’re wanting to make this recipe alcohol-free. Then it’s a great swap.

Ingredients in Keto Shrimp Scampi

  • 2 tablespoons extra-virgin olive oil
  • 4 tablespoons unsalted butter (see notes below on how to make it dairy-free)
  • 1/2 medium onion, diced (we like yellow onions here)
  • 4 cloves minced garlic (always fresh, never pre-minced)
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper (we’re in love with this Diaspora Co. Aranya Pepper)
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Juice and zest of 1 lemon
  • 1 cup dry white wineĀ (such as a pinot grigio)
  • 1 lb shrimp, deveined and peeledĀ  (we like to leave the tails intact)
  • Fresh parsley, for garnish
  • Shaved Parmesan cheese, for garnish (see notes below for dairy-free options)

How to make Keto Shrimp ScampiĀ 

  1. Place the olive oil and butter in a 10″ or larger cast-iron skillet over medium heat. Once hot, add in the onion and cook until soft and translucent, about 3-5 minutes.
  2. Add in the garlic, red pepper flakes, Italian seasoning, and lemon zest and cook until garlic is fragrant, about 30 seconds.
  3. Next, add in white wine and lemon juice, cook to reduce sauce about 5 minutes.
  4. Add in shrimp and cook until they turn pink, about 3 minutes. Season with salt and pepper to taste.
  5. Garnish with parmesan cheese and parsley to serve.

Simple! Swap out the butter for vegan butter, we like Miyokos. Swap the Parmesan cheese for vegan parm, we like Violife!

How to make this recipe paleo and Whole30 compliant

You’ll want to swap out the butter for extra olive oil, nix the Parmesan cheese, and use broth (chicken or veggie works great) in place of the dry white wine.

History of Shrimp Scampi

Shrimp Scampi as you know it wasn’t traditional to Italy. It actually came about as Italian immigrants made their way to the US and adapted American ingredients for their Italian recipes. The fusion of food cultures always starts with migration patterns.

In Italy, traditional Shrimp Scampi was made with, well, Scampi. Scampi are tiny, lobster-like crustaceansĀ also known as langoustines. In the traditional variation of the dish, Scampi were quickly cooked with olive oil and garlic.

Some cooks put a further spin on the dish by adding tomatoes, tarragon, tomatoes, or breadcrumbs. So interesting!

Our version here is most like what you’re probably familiar with here in the US. Next time though we may just add some tomatoes and tarragon and see what happens!
