Keto Chorizo Chili! 🌶 It’s so spicy, so easy, and oh so good that this may just become a weekly go-to for you, and us! We love whipping up a massive pot of soup at the beginning of the week to have on hand for easy meals and this one does not disappoint. Here’s what we’ve got going on in the pot of goodness…

Ingredients in Keto Chorizo Chili

  • Kiolbassa Chorizo – the BEST chorizo we’ve tried and made by one of our favorite companies. This chorizo is made in small batches and is gluten-free and dairy-free.
  • Ground beef
  • Onion
  • Garlic
  • Tomatoes
  • Peppers
  • Spices
  • Bone broth

How to make Keto Chorizo Chili

  1. Remove the casing from the chorizo. In a 5-quart Dutch oven over medium high heat brown the chorizo for 5-6 minutes, remove with a slotted spoon, place in a large bowl and set aside. Add the ground beef to the pot and brown for 5-6 minutes, remove and place in the bowl with the chorizo.
  2. Add the butter to the pot along with the diced peppers and onions. Cook for 3-4 minutes until softened, add in the garlic and cook another minute.
  3. Add in the spices and cook, stirring, for an additional 30 seconds.
  4. Add the browned meat back to the pot along with the remaining ingredients. Reduce the heat to a low simmer, cover, and cook 30 minutes.

Can I use different meat than ground beef?

You can! We’ve used ground chicken, turkey, and bison and they’re all equally delicious but we have to say we’re partial to bison!

Can I leave the chorizo in slices instead of crumbling it?

You can, but it’s not going to be cohesive. To make the chorizo crumble all you need to do is remove the casing from the links.

Optional topping options for this low-carb Keto Chili recipe

We say optional, but they’re really not 😉  The toppings are the best part in our opinion!

  • Sour cream
  • Avocado
  • Cilantro
  • Diced onion
  • Pickled jalapenos
